Healthy Microwave Desserts
"Baked" Apples
Ingredients:
- 2 apples
- 1 Tbsp. brown sugar
- 1 tsp. ground nutmeg
- 1 tsp. ground cinnamon
- 2 tsp. water
Directions:
- Core the apples, but leave the bottom intact.
- Place the apples in a casserole dish that has a cover.
- Mix the brown sugar, nutmeg, cinnamon, and water in a bowl. Pour the mixture in the hollow space of each apple. Cover the casserole dish.
- Microwave for 3.5 - 4 minutes or until tender. Let the apple cool to a manageable temperature before serving.

Peanut Butter Chocolate Cake
Ingredients:
- 1 Tbsp. plus 2 tsp. cocoa powder
- 3 Tbsp. powdered peanut butter (PB2)
- pinch of salt
- 1 Tbsp. plus 1 tsp. sugar
- 1/4 tsp. baking powder
- 2 tsp. coconut oil
- 3 Tbsp. milk
- 1/4 tsp. vanilla extract
Directions
- Combine dry ingredients in a coffee mug and mix until well blended. Add liquid ingredients. Microwave for about 1 minute and 25 seconds.

Warm & Fruity Oatmeal
Ingredients:
- 1 egg
- 1/2 c. quick cooking oats
- 1 Tbsp. ground almonds
- 1/2 c. skim milk
- 1/4 tsp. cinnamon
- 1/2 apple, chopped
- 1 Tbsp. raisins
- 1 Tbsp. finely chopped dates
- 2 tsp. honey
- 1 Tbsp. low-fat or sugar-free nut butter
Directions
- In a microwaveable bowl, slightly beat egg. Mix in oatmeal, cinnamon, and ground almonds. Next, mix in all fruit and honey. Cook in microwave for 2 minutes. Stir and add nut butter.
